Craft Spirits & Cellar

Spirits selected after dark

A curated collection of Australian craft spirits and rare vintages, served in an atmosphere of quiet luxury. The cellar features small-batch whiskies, gins, rums, and boutique wines, each selected for story, provenance, and exceptional quality. Guided tastings unfold in an intimate setting for adults 18+.

The Art of Curation

A Cellar Built on Stories

Every bottle in our cellar has a story—of the distiller's craft, the region's character, and the moment it was chosen. We prioritise small-batch Australian distillers who use local ingredients, and our wine list focuses on boutique vineyards with sustainable practices.

The collection evolves seasonally, reflecting new releases and rare finds. Our beverage director curates each addition with an eye for balance, ensuring the cellar remains a living expression of Australian craft rather than a static list.

“We choose bottles that speak of their place and maker—never simply to fill a shelf.”

— Our Beverage Director

Cellar Standards

Quiet discipline behind every pour

Temperature & Humidity Control

Our cellar maintains a constant 14°C and 70% humidity to preserve every bottle. Wines are stored horizontally to keep corks moist, spirits are kept away from direct light, and regular inventory checks ensure freshness.

Glassware & Service

Each spirit is served in glassware designed to enhance its aromatics, from Glencairn glasses for whisky to copitas for agave. Glassware is polished and inspected before service, and staff are trained in proper pouring and presentation.

Sourcing & Provenance

We work directly with distillers and winemakers to ensure authenticity and traceability. Every bottle has a documented provenance, and we prioritise producers with sustainable practices.

Pairing with the Menu

A Symphony of Flavour

Our sommelier works with the kitchen to create pairings that elevate both the dish and the drink. These examples illustrate the approach rather than a fixed menu.

  • Tasmanian single malt with dark chocolate and native pepper
  • Citrus-forward gin with freshly shucked oysters
  • Cool-climate Chardonnay with roasted barramundi

Responsible Enjoyment

Enjoy in Moderation

We encourage our guests to savour our spirits responsibly and in moderation. Our staff are trained in responsible service of alcohol, we offer non-alcoholic alternatives, and we can arrange safe transport. Guests must be 18 years or older to consume alcohol.
